Blueberry Protein Muffins

These are my new addiction. I got the recipe from little b, who got it from Jamie Eason. Regardless, they're AMAZING! They were part of my food prep on Sunday!

Ingredients:
- 1 1/2 c oat flour
- 3 scoops protein powder
- 1 tsp baking soda
-1/2 c Stevia/Truvia/etc
-2 egg whites
-1 c unsweetened almond milk
-1/3 c unsweetened apple sauce
-1 tbsp vanilla extract
-1/4 c non fat greek yogurt
-1/2 c blueberries (I threw a couple on top too)

Directions:
1. Preheat oven to 350
2. Combine wet ingredients in one bowl, dry in another, then whisk together.
3. place batter into greased muffin pan (don't fill all the way up because they do rise a little)

 In one bowl mix:
1 1/2 cup oat flour
3 scoops vanilla protein
1 tsp baking soda
1/2 cup sweetener (whatever kind you use)

In another bowl:
2 egg whites (about 1/4 cup)
1 cup unsweetened almond milk
1/3 cup unsweetened apple sauce
1/4 cup LF cottage cheese (blended) OR greek yogurt

Whisk the two bowls together and then add 1/2 (or more) or blueberries. Distribute between 12 muffin cups (I use paper cups to line mine, you can also use oil). Bake at 350 until a toothpick comes out clean (in my over it is about 17 minutes). 

For an idea of nutritional info, which will change based on the specific ingredients you use, per muffin it is approximately:

90 calories
1.5g fat
11g carbs
9g protein
