I'm struggling with what to call this recipe. I created it mainly because I miss yogurt and ice cream, and LF cottage cheese just doesn't do it for me all the time. It's super simple!
2/3 cup (LF) cottage cheese
1 1/2 - 2 scoops vanilla protein powder
1/4 cup unsweetened almond milk
I mix the protein and almond milk a bit first, and then throw it into my nutribullet to blend with the cottage cheese. You can play around with the measurements to get different consistencies. Right out of the blender it is a mousse-like consistency, but it gets more liquid-y after being in the fridge a day or two.
I like to throw berries on mine, or any combination of chia, bran, fruit etc.
